As many of you who follow the NFL know, tonight the 49ers played their last-ever game at Candlestick Park. Now I’m not a football fan of any sort, but my boyfriend is and came over to watch. I prepared this dip as a game-watching snack. That counts as getting involved in the game… right? Even a little bit?

The game ended up being a pretty good one though, so to my disbelief, even I got wrapped up in it. But of course the spinach dip was still the star of the show (in my book, at least).

Ingredients
1 can (14 oz) artichoke hearts
1 pack (10 oz) frozen, cut spinach (thawed)
2 cups freshly grated parmesan cheese
1 cup (8 oz) cream cheese
2/3 cup sour cream
1/3 cup mayonnaise
3 cloves garlic, roughly chopped
1 tbsp olive oil
1 tbsp freshly squeezed lemon juice
Pinch of fresh cracked black pepper

1. Heat your oven to 375°.

2. In a food processor, add in your artichoke, spinach, garlic, and olive oil. Pulse until it reaches a coarse paste (i.e. bite-size chunks of artichoke hearts are still visible). Though, if you like it creamier, pulse away until you’re satisfied.

3. Transfer your paste into a larger mixing bowl, and add in the mayo, sour cream, cream cheese, parmesan, lemon juice, and black pepper. Mix everything together with a spatula until evenly combined. Don’t freak out if your cream cheese isn’t completely mixed in, it’ll make for some good melty pockets of cheese in your dip.

4. Transfer the dip into oven-safe containers, and top with some extra grated parmesan if you’d like. I used two small ramekins, because I like halving the portions so I can save some to make on another dip-worthy day. (Also to keep me from eating it all at once.)

5. Bake, uncovered, for 30 minutes. Serve immediately while hot with some pita chips, crostini, bruschette, or whatever you want, really.

*Note: If you have any leftover dip, store it in the fridge and use it as a sandwich spread. Or, use it as a dip again (hot or cold). Either way, totally awesome.
